Who’s the most fascinating person coffee has connected you with?
Through coffee, I'm introduced to fascinating people every day with different stories and inspirations — from people in the arts to politicians like Chloe Swarbrick.
Learning to pull specific notes out of the coffee and to move beyond the cliche answer of dark chocolate and citrus notes haha. It's easy to know what to look for once someone tells you but I have really been trying to train my brain to associate tastes with identifiable flavour notes.
Outside of making coffee, what do you enjoy doing?
Bike rides and beaches.
Where do you get your caffeine fix on your days off?
Holm! Friendly crew and always a perfect coffee.
Do you remember what was the biggest day on the machine and how many coffees you made?
Not specifically, but there is nothing more satisfying than a busy day where you (and your team) have the perfect flow of a well-oiled machine. Kōkako is the most consistently busy cafe I have worked at, often pulling over 500 extractions a day.
